The activity of antioxidants in dispersed systems is influenced by various physicochemical parameters such as partition behaviour, polarity, and interactions arising with other matrix constituents. Although the inter-face is the main site of lipid oxidation, its enrichment with anti-oxidants mostly result in a deficient antioxidant activity caused by inter-actions between antioxidants and emulsifiers. To characterise these interac-tions various 1H-NMR techniques and SANS measure-ments have been carried out. It was possible to correlate the specific location and interac-tions of antioxidants with the type of the emulsifier. Quantifi-cation by ESR spectroscopy showed that the proximity between antioxi-dant and radical is controlled by the emulsifier and that in turn influ-ences the radical-reducing ability. The data obtained can be used to systemati-cally select matrix constituents for dispersed systems like food, phar-maceuticals, and cosmetics in order to optimise the activity of antioxi-dants.

Anja Heins studied nutritional science and did her doctorate at the Division of Food Technology of the University of Kiel. In the field of lipid oxidation, she investigates effects of system composition on antioxidant activity on a molecular level.
