High blood concentrations of vitamin E, the most important lipid-soluble antioxidant in humans, may be inversely correlated with the risk of cardiovascular diseases and certain cancers. Previous studies in cultured cells and laboratory animals reported synergistic interactions of dietary phytochemicals with vitamin E and antioxidant enzymes. Supplementation with phytochemicals also modulated activities of xenobiotic (phase I and II) enzymes. Changes in the activities of these enzymes may in turn alter the therapeutic efficiency of certain pharmaceuticals. In this doctoral dissertation, the effects of three common dietary phytochemicals, the flavonol quercetin, the isoflavone genistein and the flavanol (+)-catechin, on vitamin E status and the activities of hepatic antioxidant and xenobiotic enzymes were investigated in growing laboratory rats. The results indicate that dietary supplementation of growing rats with these flavonoids at high doses have no effects on vitamin E and liver oxidant/antioxidant status but does significantly affect hepatic phase II enzymes
